These cold months were meant for sitting by the fireplace with a warm drink. To take advantage of that soothing experience, we recently revamped our Irish coffee to be the ultimate winter warmer. Using homemade ingredients and quality coffee, the Irish coffee at Kildare’s in West Chester is perfectly balanced for comfort.

Our owner, Dane Gray, said, “When you get a basic Irish coffee, you get a lot of whiskey at first, which can be too much. We tweaked the ingredients, so we use a dark French roast from a local company, Lamont. We make the Demerara simple syrup in house, and the bartenders shake the Bailey’s whipped cream themselves.” The bartenders may get a workout whipping the cream, but it is worth it for the taste.

The coffee, whiskey and cream blend delightfully in our new Irish coffee glass. Dane said, “It’s perfect for sitting by the fireplace. You get a buzz from the coffee and the whiskey that really balances out.” We think that is the perfect way to escape the cold this winter: next to the warmth of the fire with a hot, spiked coffee in hand.
