Dane Gray

Dane is an Australian Native who decided that Ireland was his calling and moved there at the age of 21. Growing up in coastal Australia, a local pub is a staple in the community and a social hub. Starting work at the age of 14 collecting empty glasses, the atmosphere and culture stayed in his blood. Having graduated college with a Business Degree in Hospitality and Tourism Management, he accepted the role of a Hospitality Manager in the Morrison Hotel in Dublin, Ireland. The Morrison Hotel was a new Boutique hotel that was to become the symbol of a new Modern Dublin City as they housed the music and movie stars of the time. Here is where he stayed for 5 years. Not stemming far from his Australian culture, he fell in love with the culture of the Irish Pub and the natural feel of Irish hospitality. It was after the Morrison Hotel that he moved to Philadelphia and started with Kildare’s Irish Pubs. Starting as Floor Manager in a team of 5 in 2004, by 2007, Dane was promoted to his first General Manager Position. In 2009, he was in charge of the two busiest locations in the company and by 2011 he was now the Director of Operations and responsible for the entire brand which included 7 locations.  All of this prepared him to buy his dream location in downtown West Chester in 2015.  Dane has managed to achieve all of this as well as bringing up two young boys Darragh, and Oliver with his wife of 9 years Stephanie.

Stephanie Gray

Stephanie was born in New York City and grew up mainly in Montgomery County.  She graduated high school and then went to the University of Pittsburgh with aspirations to receive a PhD in Clinical Psychology.  Throughout this time she worked in the restaurant business as a server and fell in love what she wanted to do since she was a little girl.  As a child she would watch Julia Child and pretend to cook with her.  With a bit over a year left of undergraduate studies she decided to take a year off and learn how to cook.  She got a job as a garde manger cook and worked her way up through the ranks of the kitchen brigade.  At the age of 22 she was accepted into the Culinary Institute of America in Hyde Park, NY.  During school she did an externship at the New Orleans Marriott.  After finishing at the top of her class she went back to Philadelphia and worked in some of the top restaurants in the city.  She became an executive chef quickly and did that for several years.  She then decided to round out her resume and that turned out to be the beginning of her run as the Executive Chef for the Kildare’s Brand.  She did this for 5 years and helped open 7 restaurants.  During these years she met and married her husband and in 2008-2009 she decided to take some time and become a mother to 2 sons.  All of her 20 + year of experience helped her join her husband with the running of their pub in West Chester together.  She is in charge of the kitchen and all of the menus, beer dinners and specials.
